The coffee is silky smooth with lots of depth and complexity, meeting you with a tropical juiciness resembling fresh apricot, followed by hazelnut and caramel sweetness, with a pleasant round cherry-like fruitiness on the finish.

Segundo Ruiz Salvador owns the 11-hectare farm El Diamante, where 8 hectares are in production for coffee. He produces only Yellow Caturra. After picking and depulping the coffee, he ferments it for between 20–25 hours before washing, and dries slowly under shade.
